Parmigiano Reggiano?

I want to buy one of the big chunks at Costco but it will take me months to go through it. Can you freeze it and what would the best way to do it and take out a little at a time?

Friend,

I have a two year old block of hard Parm I bought at Sam’s. Every now and then a portion turns green so I trim it. Still tastes good and I haven’t gotten sick from it. Never frozen.

It lasts a LONG time in the fridge and why would it take that long? I go through at least 5-6 a year or more.

I’m just cooking for one. Do you wrap it in parchment paper and put it in a ziplock bag?

Wrapping it tightly in plastic wrap, not a Ziploc, will keep it edible longer.

No need to freeze—keep it in the fridge and it will be fine, I bought a huge chunk at the beginning of the Covid mess and I’m down to the last 1/4 lb. no mold, no quality decline. I keep,it inside a square glass storage container with a plastic snap lid.

What I did was buy the costco large chunks and then cut into 5 smaller pieces that I vacuum sealed and put in fridge. Figure it would keep the unused pieces fresher until I go through the open one.

People already answered your question. But I’ll add to freeze your rind instead of tossing it when you’re done. Throw the rind in your next pot of veggie soup or tomato soup.

Then you can make my Dual Layer Veg Soup

Add it to a broth with a whole chicken and some prime rib and make a pasta.
