Pad Thai

Anyone ever make it at home. Favorite family place closed in BR and they can't find a place they like.

I've tried a few different recipes, but haven't found one I really like yet. This was the best one I've tried, but it still needed some improvement. I've only made it once though, so no recommendations on how to improve it.

As teh recipe says, some of the ingredients for traditional Pad Thai can be hard to find. Likely easier to find if you have a good Asian market in your town.

That one is tamarmind based. I usually skip that and add a tablespoon of peanut butter.

Here is my personal recipe:
10 oz cooked thin rice noodles or other if necessary
About 3 TBS oil (light flavored is best, peanut is best IMO)
1 cup or bean sprouts
½ cup shredded carrots
4 cloves minced garlic
3 eggs
3 sliced green onions
Peanuts (halves or chopped depending on preference)
1/3 cup packed brown sugar
¼ cup fish sauce
2 TBS Soy Sauce
¼ tamarind concentrate (if you can’t find, pineapple or some other tangy juice would work)
Juice of 1 lime
¼ tsp of red pepper flakes (more if you want spicier)
This will make 4-6 servings. I usually double this when I cook it for my household.
Prep all of your ingredients first, because this should go quickly once you are ready.
Go ahead and cook your noodles, mince, chop, slice meat and veggies, beat eggs, and make your sauce with the highlighted ingredients
When you have everything ready to go, heat 2/3 of the oil in a large wok over medium high to high heat. Swirl it around to coat the pan most of the way up.
Once nice and hot, cook your meat and remove with slotted spoon until later.
Add the rest of the oil, and saute the garlic, carrots, bean sprouts, onion, and whatever other veggies you want (sliced mushrooms are great)
Once the veggies are limp, push them off to one side of the pan, and scramble your eggs on the other side
Then, put the meat back in and toss it all around together.
Then, pour in your sauce, and toss it all a few times until everything is coated and hot.
Remove from heat and top with peanuts and more green onion if you like.
Sriracha is nice to add for a little extra heat and flavor too.
I basically make my fried rice the same way, except that I make a sauce with soy sauce, white pepper, ground ginger, little sesame oil instead. The key to the fried rice is to make sure to not overcook the rice. I usually boil the rice for like 12 minutes (like pasta), strain it, then rinse it to remove some of the extra starchiness. Also, peas are a must for my family. I just toss in ½ to 1 cup of frozen peas along with the cooked rice.

what are you talking about? I freaking love pad thai and since we are working at home I have not been to BR in a while. I was seriously asking which restaurant closed. We normally eat at Thai Pepper or Thai Kitchen but my best friend is also partial to Thai Chili.
I am a huge supporter of family owned restaurants and businesses. I am not a chain restaurant or big box store person at all.
eta: we live in Denham and I have found that Lee's Asian fusion in Watson has a decent pad thai as well

That is why I asked. I haven't heard of any place closing recently. Did Rama maybe close a while back? Or is Rama vietnamese? I have never eaten there even though I have heard good things. So that is why I asked. Not sure how this became an "I agree with government closing small businesses situation".

Rama did close :( But it isn't all bad news. DiGiulio's bought the building and they plan to renovate it into a bar waiting area/private event room.

Rama was Thai but the people that owned it / ran it were Vietnamese.
They had the best pad Thai that I've ever had. One of my favorite BR restaurants.

I too am curious.
I'm still pissed at myself for never trying Rama before it closed. Been to DiGiulio's and other restaurants in that area before but not that one.

No. I've never had it come out dry. If that has been a problem for you, try pineapple juice instead of the tamarind.
