I used to work in a restaurant that had pad thai on the menu. The recipe isn't in no way authentic, but it tasted very similar to pad thai. The sauce consisted of Oyster sauce, sugar, fish sauce, and ketchup. Yes, ketchup. I was confused, but I tried it and it has a very tart taste similar to tamarind used in pad thai.

Maybe try adding soy sauce to the water you cook your noodles in so it absorbs into the noodles. If that works, then you could leave out some of the soy later, reducing the liquid.

Rama was by far the best but i have found a new favorite and it’s very close to Rama. Thai Kitchen has a great one. We’ve been ordering it pretty regularly and it’s so good! Also, try their lemongrass soup too. Soooo good!
