I’ll budget 2 hours. 30 minutes of bandage time. I do appreciate everyone’s advice. I am gonna try it. Looking up recipes for the chargrilled today. Planning on mixing up a nice tub of it and putting a dollop on each oyster. Is that about right.

Owned a bar and thought having oysters on the half shell might increase business. Well, it did but it also increased band aid use. Once I figured it out wasn't hard at all. Clean em really good, find the gap at the end of the oyster. Place a wet towel on the top of the oyster, find the crease and turn your wrist in a circular motion with the knofe.. Do not push into the oyster, bleeding will ensue, not from the oyster but from your hand holding the oyster down. Once you pop it, scrape the oyster on the inside top, the muscle will release and scrape the inside bottom shell. Enjoy.

My cousin had a big Super Bowl party a few years back and got 3 sacks and grilled many several dozen oysters. Despite the substantial crowd it was the only time I recall having literally all you can eat of both grilled and raw oysters. Had sacks raw several times. Good times.

Yes sir. I love oysters. One of my fondest memories is shucking a sack with my Dad. One for my mouth, an one for the bowl for frying.

When I have to shuck oysters for a crowd I open them ahead of time, putting oyster and shell in round plastic trays or rectangle aluminum pans.

I then stack them up in a large ice chest or in my spare refrigerator. I use a spacer to make sure the bottom of each tray is above the oyster.

Pull out one or two trays and grill up.

My dad would get a boat sack around Christmas every year when I was a teen. I shucked with a screwdriver. Good times.

I still have my Dad’s Dexter, that he sharpened the tip. He was a really good shucker. He ate lunch a lot at Phil’s in BR. If it got really busy, he would get behind the bar to help shuck.

I always get oysters by the sack from Schaeffer's in Bucktown on Lake Ave.
