OK, for everyone that ever liked a tuna casserole, my wife found this and she and my mother both LOVE it. So if you have one of those women in your life that loves creaminess and sour cream, use this to keep them happy.
Tuna Noodle Casserole
Egg noddles in a delicious creamy mushroom soup sauce tossed with tuna, sauteed onions, peas and cheddar cheese, topped with crushed potato chips then baked to perfection...just like grandma used make. Old school comfort food.
If you were a kid growing up in the 70s and 80s, there's a good chance this casserole was served often at the dinner table - it was a staple in our home. This recipe was passed down from my grandma and has changed a smidgen over the years but still remains a classic.
Old school comfort food at its best! Simple to make, so good.
12 oz wide egg noodles, slightly under-cooked
1/2 cup yellow onion, diced
2 Tbs butter
12 oz can tuna in water, drained well
2 cans (10.5 oz each) cream of mushroom soup (or homemade)
3 cup mayonnaise
1/3 cup sour cream
1/3 cup milk
1/2 tsp salt
1/2 tsp pepper
1 cup (or more) shredded cheddar cheese
1 cup peas
1 cup crushed potato chips
1. Preheat oven to 350 degrees F. Spray a 9x13 baking dish with non-stick cooking spray. Prepare egg noodles, making sure to slightly under cook them by 2 minutes so they are slightly firm. Drain well.
2. In a skillet over medium to medium-high heat melt butter and add onions. Cook until onions are tender and translucent.
3. In a large bowl add cream of mushroom soup, mayonnaise, sour cream, milk, salt, pepper, and the cooked onions and butter from skillet. Mix well. Next, add tuna, peas, cheddar cheese and mix well. Last, add prepared egg noodles, gently folding into soup/tuna mixture until well blended. Pour mixture into casserole dish. Top evenly with crushed potato chips.
4. Place casserole on middle rack of oven and bake for approximately 30 minutes uncovered, until casserole is completely heated through.

One of our favorite comfort foods is to boil three or four portions of medium egg noodles, drain and add a can of tuna, along with a large spoon of mayonnaise, mix it up add back pepper and serve warm, with peas and maybe corn.
Wonderful stuff - makes me feel all good inside just thinking about it.
Some day the wife will be looking the other way and I'm going to make it out of a nice 2 inch thick tuna fillet, cooked in butter and capers in place of the canned tuna.
Just can't shake the feeling that the substitution of fresh for canned would be worth getting yelled at.
Wonderful stuff - makes me feel all good inside just thinking about it.

I think the key with the stroganoff is to get the "Deluxe" version. My kids will eat that stuff up with a quickness, and so will I. It is just beef, noodles, and sauce.

Cheeseburger Mac and one other flavor that I can't recall were often on the menu at my BR apartment. I had never had HH in my life, but my roommate turned me on to it.
I don't think I've had any since I graduated, but I'd give it a shot if someone made it.
