Oil used to fry a turkey...

I will buy a fresh container of Peanut Oil every fall for frying for Thanksgiving day. When done, I let the oil sit, covered, in the pot until the next day so any crap settles to the bottom, and you will have some crap settle.

Then I pour it off into the container being careful to not let the bottom crud back into the container, close it up and put it in my shop to save to use later in the year.

I will usually fry another bird for the Super Bowl and then again around Easter. By then I will bring the oil to a service station near my house that they let me dump it in their oil storage tank and be done with it.

As long as there's no real crazy temperature swings where you have the oil stored, it should stay good. But, it is alway good to give it the old "smell test" before using again. Your nose won't lie if it's bad.

It's crazy. The oil that most people use is already an oxidized mess fresh out of the container. Then they fry food in it at high temps and want to store it for months on end to use multiple times. I don't get it.
