Offset Vertical Smoker

A non-corona topic for the OT.

Anyone here used an offset vertical smoker for BBQ?

I have used a traditional horizontal offset for years but I am thinking of trying a vertical one since I will be staying home for the next few weeks.

Do they cook differently? You like them more? Less? Any advice or ideas that could be helpful would be appreciated.

(I considered putting this on the Outdoor or Food Board but it seems OT enough.)

Well it could go on any of the three boards. This one gets the most traffic. If it gets moved, that's cool.

It’s not an offset, but i built a barrel smoker, one of my favorite things to cook on now. Can easily do a 16-18 hr cook at 225 without adding fuel.

I’ve been thinking about doing an offset for quite some time as the barrel smoker is limited in space.

Just get a horizontal offset with a rib box. A vertical offset is fine, but you have to accept that there is going to be a significant temperature differential from bottom to top rack.

I figured that would be the case. However, I can also see the benefit of being able to do multiple different temps/meats.

I'm a die hard horizontal offset guy, but for the heck of it once I got an insulated vertical cabinet. Just cooking in that I determined I didn't like multiple racks of food on top of each other like that. Depending what you have I feel like what's dripping below can affect your bark.

I can't speak to an offset vertical, but I started with an offset horizontal. Then I built an ugly drum smoker and never looked back. I once ran the thing for 22 hours and there was still coal left in the basket.

expect to use a LOT more fuel unless you shell out the big bucks for a nice one. I have a mid-range offset, it uses at probably 5 X as much fuel as my drum smoker and takes a lot more tending to (and that's with mods such as sealing the lids with gaskets and a heat distribution plate).

I do think the offset provides a better result, if you wanna spend more money on fuel than your meat costs, or you have access to a forest.

I used the plans here:

except I didn't build the coal basket, I bought that (didn't want to learn to weld). And to burn out the liner I just ran it at full steam on a full basket a couple times (it got over 700)

I've been wanting another offset horizontal smoker, but kinda leaning towards a barrel smoker.
I hear a lot of good things about them.

Sometimes when I really wanna impress I'll smoke the first 4 hours of a brisket in my fuel sucking offset, when it absorbs most of the smoke flavor, then finish it in the more efficient barrel.

I had been researching different smokers for a while and ended up buying an Oklahoma Joe Bronco to make some Corona-Que.

OK Joe makes an offset vertical called a "bandera". Looks pretty cool.

Yeah, I was looking at that one. I think I may run to Academy and take a closer look at the Bandera and the Triton Vertical.

I don't want to spend an obscene amount of money for a new smoker that I am not even sure I would use more than my horizontal offset. Those two are right in my price-range.

I have two concerns after reading the reviews:

1) They leak smoke. Easy enough to fix with lava tape, but annoying.

2) The metal might be a little thin for my liking.
