Fresh shrimp is not available all year long so you have to sell frozen (instant quick frozen (or IQF) on the boat) shrimp that is thawed out. These shrimp are frozen minutes after they are caught and are very fresh when frozen. If anyone tells you otherwise about fresh shrimp, they are lying.
90% of the shrimp that are bought at any local market are just like this and I for one think that is as fresh as they can be. Most people do not realize this.

You do know if you don't use Leidenheimer bread they can only be called a sandwich and really your Baton Rouge address forbids you from being able to make a good one anyway.
just sayin...

Haha, that's pretty funny. I have noticed that on here about po-boys and baton rouge. But we are using Leidenheimer bread, so hopefully that will help out the address thing we have going against us.

Yes I agree. Frozen shrimp are just as tasty in my opinion. 99% of restaurants use frozen headless or tails (to devein with the tail on) and frozen peeled (for po-boys, salads, gumbo, pasta, etc.).

I checked out your deli menu, and will definitely give your place a try. Will you be having any daily offerings like red beans & rice, etouffee, etc.?

Not at first we wont but we plan on doing plate lunches or daily specials about 3-4 weeks after opening. We want to get the basics right first.

By the way: I am taking pre-orders on live crawfish and live crabs for the weekend if anyone is interested. I am going to be closed saturday but anyone can pick them up friday night. We will be open until 8pm friday night.
The special is still on: buy a sack of crawfish or a dozen live crabs and get 10% off any seafood boil. We have all liquids and dry boil in the Louisiana Fish Fry, Zatarain, and Cajun Land brands.

Here's a link to our starting menu:
Starting Menu
We just got the ok to start around 3pm yesterday evening so we had to rush to get things open and that's why we are going to be doing a somewhat limited menu for today and tommorrow. The full menu should start next week.
