DERIVATIVE: our newest culinary experimentation that explores curious ingredients, expanding the knowledge and limits of our expressions. •••
With DERIVATIVE?? we explore the expressions of Cryo Amarillo hops + the refermentation of Viognier white wine grapes in a DIPA. The two ingredients share a pronounced citrus overtone that accelerates into a melange of melon, juniper, pine, and honey. The residual sugar from the grapes brings a pleasant creamy finish that balances the whole experience. Big, warm, and delicious!
