Wait ... he never heard of kombucha?
He's always seemed overly subjective. Regardless of the popularity of a dish in New Orleans, if he personally doesn't like it, then there's nothing to discuss ... even if there may be a story there. Ex: Yakamein, or Mandarin Chicken.
Seems to apply the same logic to whether he keeps up with the latest food and beverage trends. If he personally doesn't care for it, then he doesn't bother ... so what if that's his job? He's stuck in the past.

According to the sauce over a glass of wine I was told the combination of very high rent and Metry peeps not spending as much as others do at the NO location did not make the numbers work.

Not sure if anyone else notices, but Tom's memory seems to be worsening daily. He really forgets almost everything he's about to say or said less than 10 minutes ago.
