New Year’s Eve food

I got started a little early today and did some awesome black eyed peas and then smoked some monster meatballs!

Got some smothered tenderloins and backstrap(loin) working from some wild boar we processed yesterday. I’m pretty excited.

Simple and (I hope) quiet at our house. These holidays have been wearying. Probably blackeye peas (from dried), ham and cabbage slaw. The wife does a slaw, that is an exact match for old KFC slaw that I really like.
Oh, I almost forgot. we will watch MSU football in the Outback Bowl from Tampa at 11:00 am, so lunch will be balanced on my lap, watching the TV.

Meatball recipe—
Six pounds of ground beef, 1.5 lbs of pork sausage.
Grated parm, shredded parm, Italian breadcrumbs, onion, bell pepper, scallions, garlic, garlic salt, meat church holy gospel seasoning, two eggs.
Mix all extremely well. I like flavor so I use a lot of seasoning, lots of onions and scallions.
Form into meatballs, get the egg up to 300, throw on some wood (I used mesquite and it was probably too strong for meatballs), put the meatballs on a rack on top of a ban, onto the smoker.
I smoked them a couple of hours until they were at 160-165 internal.
Turned out awesome. Can use them in marinara sauce or make a meatloaf ketchup and top them with that. Hope this helps.
