I usually do baby back, but looking at possibly doing another type (St. Louis, Spare rib, beef ribs, etc....) so what are some of your favorite type of ribs to cook and your recipe/method?

I had the same idea a while back. We tried slate and St. Louis. While they have their merits, we went back to baby back in a hurry

One of my favorite rib recipes. I've only done it with BB ribs but could certainly work with spares

ETA: this is how I rub and baste them but I cook them on the egg your typical way (not in oven as this recipe suggests)

I'm starting to prefer beef ribs over pork ribs.

Last beef ribs I had were boiled in water/seasoned beef broth for an hour, seasoned, then put on the smoker for 3 hrs at 250. Came out very good.

I prefer spare ribs, with a dry rub and smoked at 230 for 3 hours, then baste with apple cider vinegar and wrap and cook for 2 more hours or so, then unwrap, sauce and back on the smoker to finish, maybe 30 minutes or so.

Years back, St. Louis cut ribs were hard to find where I live, so I used baby backs routinely. I recently made a rack of St Louis ribs and was beyond pleased with them. They seem to be more forgiving than bay backs. I' ll probably use St Louis ribs more often now that I can find themroutinely
