New Orleans version of crawfish seasoning

This question is for those of you who have ever had crawfish from the bucktown/metairie/New Orleans area from local seafood stores and groceries. What ingredients do these places use in their spice mix?

It seems significantly different than bag seasoning that is sold in stores. These homemade mixes taste more earthy and salty with less spice, I guess is the best way I can describe it.

Any insights into their spice mixes? Or a bag brand that tastes similar?

A lot of the old school places still do it old school. They use actual onions, garlic, lemons & celery. They mostly don’t use any pro boil type products meaning liquid crab boil, boxes of salt, garlic powder, cayenne, etc. Some use dry Italian seasoning, some just use bay leaves. A lot also use Zat’s bags. Those have mustard and dill seed; coriander, bay leaf, cayenne and allspice which could be that earthy flavor you’re talking about.

Schafer's will sell you a ziplock bag of premixed seasoning. If you do a double boil they'll also set you up with a second bag to dump into the first boil.

Cajun Land, baw.

It's made by the same distributors that supply most of those places.

Add fresh lemons, celery, garlic, and onions.

That'll give you the flavor you're looking for.

its the bag mix that is different, less variety of spice ingredients i believe.

i used to do the bags with liquid and it was better then just the bag but when i switched to the dry powder boil mix it was way better then anything i did before.

go buy the powder mix and use that then see how you like the difference in how it tastes, way way cheaper as well. dont need to add salt or anything just use the mix as-is.

use roughly 1 lbs of mix for every 10 gallons of water and if you want it spicy add an 8oz bottle of liquid crab boil to it. or you can get the extra spicy version but i like to control just how hot it is for my own taste buds.

Ive used all of the bag seasonings. They just have a completely different flavor than local seafood restaurants

I was hoping someone had a basic recipe to make your own similar to the restauarants

i never said use the "bag" seasonings, thats why you cant get the flavor you are after.

use the dry powder seasoning in a jar, if you dont want to listen then i cant help you but the jar seasoning taste nothing like the bag seasonings

By “bag” I don’t mean the bags you drop in the boil. I’m talking about the seasonings that are sold in bags (zatarains, Louisiana, etc.) Sorry, I can see why that was confusing
