lots of things can change the flavor.
washing the seafood off first is a big thing to not skip, with crabs and shrimp you just wash it down with a hose, with crawfish its good to fill the pot with tap water first them give then about 15 minutes to purge the swamp mud and muck out as well as get any bait scraps and swamp trash gets cleaned out, then lift the basket and set aside, dump the purge water, rinse out the pot, and then refill the pot as you add your seasonings.
you need to purge crawfish or your boil will have a swamp water taste to it.
if you have well water that changes the taste a lot as well.
