Needing a KISS batter recipe to attempt to deep fry chicken legs

I'm just experimenting for myself and not big fan but have some Tyson's legs/thighs in freezer.

Wash chicken off after removing from packaging. Dredge in seasoned flour. Deep fry at 325° until golden and floating.

Dip in HEAVILY seasoned really THIN pancake batter(cheap store bought and use water, not milk), let the excess run off for a second, toss in AP flour, gently knock the excess flour off and immediately fry in shortening at 300 until nice golden brown. Check with a food thermometer to make sure it's done.

Fry 1 leg at first and adjust your salt/seasoning. I like to season my chicken a day or so in advance but still season the heck out of the batter. If you don't have pancake mix, use self rising flour.

Egg wash seasoned with garlic powder.

Flour, mixed with corn starch and seasoned with Tony's.

Makes for a very crispy skin.

soak in buttermilk and hot sauce. dredge in Flour, rice flour, corn starch and a couple of table spoons of baking powder, garlic powder, salt, WHITE pepper. Let sit for an hour or so before frying on a baking rack. They turn out very crispy because of the sitting and the baking powder and rice flour.

I am about to ask the dumbest question ever so please forgive it....

Wouldn't Bisquick premade pancake batter do same as mixing flour etc up?


So soak or brine in a hot sauce for a bit, dip or dredge in the batter and deep fry?

Just trying to experiment and get used to eating chicken as the SO likes it and I despise it.

Biscuit mixes have other ingredients in them like baking soda, baking powder.... I've never used it to fry anything.

I use seasoned flour only on dry chicken, so if you brine, dry it off first. I prefer a light crispy crust to a wet batter crust.

I remember a good eats episode for fried chicken where only a few inches of oil is used rather than deep fry. It allows the moisture to escape which does something good for the chicken.

Mom always pan fried in an electric skillet...best chicken ever...every Saturday for lunch.

I just got some at the store for $1.50.

Should I just follow directions or is there something like using milk instead of water to make it "better"?

If I were you, I'd go with the directions on the package for your first attempt, but I've never used that mix.

that's how we do it at our tailgate.
we fill a pan with louisiana hot sauce, soak the chicken in there for 15-20 min then throw the pieces in the seasoned flour. then into the oil.
seems to work really well. But, others here may have better ideas.
