I have a friend that gives me fresh blueberries every year. Been wanting a yellow cake with white vanilla frosting for some reason. I have a bunch of blueberries to use and thought about using them in the cake somehow. I saw where some people say if you put them in the batter they just sink to the bottom and some say you can lightly flour them to stop this but some say this doesn’t help. So I thought about maybe mixing them into the icing. If I did that would it be best to cook them down then mix in I’m ethe icing it maybe just mash them then mix into the icing? Any ideas?

Blueberry muffins don't find the berries sinking into the batter when baked.

If worried about them sinking into the cake batter, just make muffins and then ice them or maybe use a blueberry muffin style batter in bigger amounts to make cake layers.

Nothing is an absolute preventative, but flouring absolutely helps in my experience.

I’m no baker but I would think they would be more likely to sink in a thin batter as opposed to a thick batter.

Kids requested a blueberry dump cake. Spray the pan with non stick. Line the bottom of the pan generously with blueberries, can use any fruit. Sprinkle a little brown sugar.Dump a box of yellow cake mix on top. Spread evenly. Put pats of butter to cover the entire top of the cake. About two sticks. Bake and enjoy

Dust them with flour or with dry mix if you’re using a mix.

I make a lemon blueberry cake

1 box cake mix—I use Pillsbury Lemon Supreme
1 small box of instant lemon pudding
3/4 cup of oil
3/4 cup of whole milk
1 tablespoon of vanilla
4 beaten eggs
Blueberries (I toss mine in flour)

Glaze:
2 cups of powdered sugar
2 Tablespoons of melted butter
2 Tablespoons of water
1/3 cup of fresh squeezed lemon juice

Preheat over to 350
Prepare a 9x13 glass dish
Combine ingredients for cake, bake for 35 min (maybe longer depending on your oven) start checking for doneness at 30.
Prepare glaze while cake is baking. Once cake is done, poke holes with a fork and pour glaze over hot cake.

Easy to make and is great the next morning with a cup of coffee!

Make a compote to put on the cake once it’s sliced. It’s just berries, syrup ( I like agave) , lemon juice , cut it a bit w water. Vanilla . I think. Look it up.
