Need a good 5 qt. pot Jambalaya recipe

Hey, I am looking for a good stove top Jambalaya recipe. The main problem I have when I cook it is that my rice ends up sticky. The flavor is always great, but the sticky rice aggravates me!

Some one said about a month ago that Louisiana has a rice that doesn't do this as much. I've looked and haven't found it. I just cut down on stirring, around every 10-15 min on low heat, to keep it from burning.

This isn't with a big pot though.

Also, try not covering it as much once the rice has a chance to steam a bit, that may help.

A bunch of people swear by Zatarains Rice, that is does not stick.

Yeah, I couldn't find any "par boiled" (sp?) rice in time. Just used regular rice. All was well and then in the end it is sticky!!!

More like Paella (sp?) than Jambalaya. TASTES GOOD THOUGH!!!

Parboiled = "converted" rice. Readily available at sams or any other grocery store.
1 rice : 1.5 water

Make sure to skim off the chicken fat, sausage fat, and water from the onions right before adding the water. Makes ALL the difference. Any other questions, just post it here.

Cut / stir the rice every 5 mins on as low flame as possible, and do NOT take the lid off other than to cut.
