Shredded pork is great for nachos.
My go to nachos
Brick of velveeta
Pound of sausage (cooked)
Can of rotel
1- 1 1/2 cups of milk
All in a crockpot
Doesn’t sound like much but it tastes great and is easy.

A block of your favorite cheese grated, a little bit of milk and some sodium citrate

I dunno man....the canned shite in the grocery store works fine for me. Add some sliced jalapenos, Pico, and you're good. Making the cheese sauce seems like a waste of time to me.

Tostitos Queso Blanco in a jar is pretty dang good on pulled pork nachos

Very nice – but if you have sodium citrate, water works just as well as milk (maybe better).

Definitely need some sodium citrate if you want to make a good cheese sauce. It's dirt cheap on Amazon and comes in quantities which will last you years.
That said, I did notice a couple different varieties of shredded "melting cheese" from either Kraft or Sargento the other day at the grocery store. Never seen it before so I'm assuming it's a new-ish product. Might be worth a shot if you can't wait around for an Amazon delivery.
Velveeta and mexican melting cheeses (block or melted) are also both good alternatives, but none of it stacks up to the sharpness and creaminess of a homemade SC based sauce.
