Somebody posted how to make homemade nacho cheese and they used either citric acid, ascobic acid, or some form of acid in fine granular form which was ordered online. Whoever posted or remembers what I am talking about help me out. Thx

Thanks guys that’s it and yes I found the original thread. I could not remember the topic I just remember someone say use any cheese and this product.

I use Wondra flour to break up those long cheese molecules so I get a smooth chili con queso, does sodium citrate work better?

I posted a plant based cheese sauce thread probably a year ago now if you want to search it. If you’re havibg a big get together nacho party type thing, it’s super easy. Better for you, if that matters at all. No need for additives / citric acid and such. Just throw in a pot, boil and blend. I’ve never tried, but I’d bet you could melt some real cheese in it. Hope this helps

So it took me awhile to order sodium citrate and now looking to make my own nacho cheese. Is this the same way to make velveta? If so, can I use sodium citrate to make Queso from scratch?

In all honesty how would you compare the flavor to a traditional cheese sauce?
