My Best Sourdough Yet (lots of pics)

First I wanted to thank (or curse) all the bakers on this site who inspired me down this rabbit hole about 4 years ago- hungryone, andouille, MeridianDog, Martini, gumbo2176 and others.
I got some suggested books and made 2 starters- wheat and rye, which I feed weekly.
This weekend I made a sourdough with a fermented porridge of wheat berries, rye berries and added flaxseed. Dough with bread flour, whole wheat flour, rye flour, barley flour, semolina flour. Top rolled in wheat germ.
I didn't take pics of the dough or first rise, but here it is at the end of the second rise in the proving basket.
Scored and into a cast iron dutch oven at 500 with lid on for 20 min, 450 lid on for 10 min more
Kind of looks like shite when it hits the dutch oven but the 'oven spring' makes it better
Lid off 25 min at 450
Cool to room temp before cutting

That’s a fine looking loaf! Good for you for persevering. Breadbaking is addictive, my habit turned into a small business. I’m stuck on walnut loaves these days.

What do you do with the loaf while the oven is going from 500 to 450? Do you just use two ovens or can the bread rest in between?

No I just turn the temp down at 20 min and leave it undisturbed.
