LL- That looks awesome. That is the size burger I prefer.

Like brisket, but my brother adds 40% short rib to the mix. May be a Michael Symon recipe.

Hardest thing about making a burger is that I want to cook it medium at least.. Med Well at worst. But anyone over the age of 40 it seems goes into shock at the slightest hint of pink it seems.

Didnt see this asked.. But how much brisket did you have to buy to get them to do this? Did they have a small point for sale or something?

no minimum and no extra charge.

They will grind any meat and amount. Charge is included already. $7/lb for brisket = dang.

Looks like she did 1 lb.

They will destroy a brisket to just get 1 lb of meat for a customer? What do they do with the rest? I have never seen ground brisket for sale.

I'd guess that they can probably sell a small brisket in a few days, and if not they can make a prepared product to sell if they don't. It's not going unused I'm sure.

I just asked for a pound grounded up and they basically cut one in half and did it right there. They had about 5 or 6 on the display shelf so it didn't seem like that big of a deal.
