Because Pluckers is wildly inconsistent with the quality of their wings. More times than not you get dry, overcooked wings. Their buffalo sauces are not geared to what people expect heat-wise. Waiting for a table, for subpar food, is the definition of overrated

So, you went to Chili's school of management and you know it all now?
You're arrogant enough to tell one of the most successful restaurant owners in the state that you can help him?
You think because you procure a traffic study, put out a flashing LED sign, watch customer behavior that you've figured out the keys to success for a restaurant?
If it were that easy, there wouldn't be an 80% failure rate, and that's not just because people didn't know what they were doing. It's because there is no one shoe fits all in the restaurant business, and if you understood that you might be taken more seriously.
Robert Irvine makes a TV show and his arrogance is for theatrics. He fixes basic concepts in a broken restaurant and gives them amazing advertisement with his presence/show. You are not Robert Irvine, and you can not provide invaluable advertisement.
And I'm still grumpy from last nights shite show at The Box.

I was questioning any restaurant mentioned in a BR thread being the best in the state.
I'm pretty slow today

quote:Ah. I said "most successful" from a pure revenue standpoint. I don't have a breakdown of the top highest grossing restaurants in the state, but I'd say it's a safe assumption that Ruffino's makes the cut.

Ruffino's
Place is always packed. I'd rank them in the top tier of the state easily.

I think restaurantguru's comments were directed to Big Jake (a 2nd generation restaurant owner) not Ruffino's.

I highly doubt this. Depends on your definition of restaurant is, but I imagine a corporate outfit or fast food chain outpaces pretty much any independent spot. If you exclude those (a reasonable exercise) there are plenty of places that likely blow Ruffino's out of the water. Of course since most restaurants are very closely held, private companies, it would be almost impossible to figure out. I guess you could do a check average/cover calculation, but that would just be conjecture.

Sure. And you're absolutely right. I excluded chains & fast food from my thoughts, unrightfully so. I was thinking local.
The point was Ruffino's does what they do well, and appears to be highly successful in their objectives and to offer help to such a place is comical.

Maybe Drew was giving him advice last night?

Its a good question though. I imagine the highest grossing restaurant in the state has to not only be high volume, but open for lunch and dinner 6 or 7 days a week. It would also need to be a place with high, high check average and an expense account type place. Probably also would need to host private events (which restaurants make a killing on).
Excluding chains and fast food, I imagine Galatoire's on Bourbon St. could be in the running.

Yes, Banquet/private rooms are nice revenue generators as well. The ability to host rehearsal dinners, graduation parties, engagement parties etc where open bar tabs in certain places can generate more in a night than some restaurants bring in over a month.
I'm not even sure where I'd start.

My comments, that you were ranting about above, were directed to Big Jake not Ruffino's.
But I admit that I did make an early offer to Ruffino's, but that was by mistake. Let me clear that up. With all the early talk in this thread about Outback and Flemmings, I got confused and thought the Ruffinos guy that showed up and commented was a Flemmings guy. So in my mind I was making the offer to Flemmings not Ruffinos.
But none of that matters anyway. I stand by my ability to help any restaurant owner, whether he be a restaurant god or a mere mortal.
You can comment and play gatekeeper all you want, but you should understand, when I made those offers to help, I wasn't addressing you.

Middle of page 9. He started with Ruffino's first.
Maybe if Ruffino's and Big Jakes used Jiffy Cornbread mix they could increase traffic and stretch their margins a bit more.
I'll make a note of it.
