i worked at ruffinos and its a money maker. i would be worried they are going to have to hire someone that is real good on the money side to make sure they make the profits they are used to. But with chef and ruffin they should still get the crowds and no servers will be worried about TJ coming in and firing them anymore

Was in there last night for a cooking demonstration by Peter and his dad. Talked to him and Ruffin and they told me about it and they are very confident. TJ wasn't in there much anyway and it has a loyal following because of those two, not TJ.
Like anything else when you sign the note you are taking a risk but without risk there is no reward. They have no plans to move beyond that one location for anytime soon so their concentration and vision is intact. I applaud them. They have the balls to step out. I admire that.

I hope somebody decides to bring in a smoker/pit and starting really doing ribs the right way at TJ's. Do they even claim to be a BBQ restaurant?

moran's deep pockets have covered the valleys in the slow times ... now there's no place to go for $$$ .. has the place been proftable ?? sure .. has the place gone through unprofitable stretches ? absolutely .. that's business .. we'll now see if these guys are good money managers ...

I like ruffin and wish him the best ... it is just that anyone in business will tell you that it is all about money management when the buck stops with you in the bank's eyes ... TJ Moran is an excellent business/money man ... a place turning a profit isn't an ultimate guarantee that it will be successful .. it is what you do with the profits that matters ... I imagine even when things got slow ruffin and sclifani got paid ... now that it is on your back, you have to watch what you take out of the business personally ... things are really slowing down now in the biz .. there is a reason why moran sold out .. he isn't stupid ...

I have a feeling that despite being full owners on paper, they'll still be working with a safety net for the foreseeable future. TJ is not going to be completely uninvolved until he's dead. There is plenty of support available to Ruffin and Peter. Those guys are like family, and I'm sure they will still talk on a more than regular basis.
This is all about asset protection and succession plans. TJ is in his late 70's and has had enough health issues to at least put a plan together for when he's gone.

Dont know too much about the situation.....but it seems funny that Moran decided to cash out of Ruffinos.
I understand the restaurant biz is slow right now.....but the clientel at Ruffinos aint exactly strapped for cash, And I am sure that they have still been raking it in even with this crappy economy.

Ruffino's is legit. I wish Ruffin well in his venture. BR needs more quality local spots like this.
