Meatloaf Gone Crazy (Photos)

Yesterday I started to make a Meatloaf. I had good intentions, but it sort'a ran away with me. Here is what happened to make these two meals.
Yesterday with Spinach Maria.
Today with Carrots and Broccoli
I started with the normal ingredients (Ground beef, Onion, Green pepper, filler (Oatmeal at our house), egg and such. Then, while I was setting everything up, I noticed some Italian Sausage, cheese and such in the fridge and thought, "Why not?" At that point, I heard a voice (think Cecil B. Demille speaking to Charley Heston about commandments). Then inspiration hit. Why not make a mixed stuff Meatloaf roll? Before I knew it, I had pulled all sorts of stuff out and was making plans I don't normally make.
I prepped my veggies, adding carrots to the mix:
I combined my ground sirloin with italian sausage and added the veggies, oatmeal, spices and egg.
And mixed it up.
Then I decided a loaf was so yesterday, and Maybe I should try a meatloaf roll. Step one, get some parchment paper And a half sheet pan, Then (using a Marta Stewart hint) I balled up the paper.
Then flattened it out. Martha says that helps it lay flat, and it does. Maybe Snoop Dog told her to do it that way.
Trimmed to fit the pan
Then spread my meat stuff out to make a 1/2 inch layer.
I was on a roll and making stuff happen. The voice said, "add Basil Marinara", so I did.
I was on a roll - Time for Mozarella Cheese.
My mind said "Now add spinach", but the voice said, Pepperoni" and so I did.
Then Parmesan (that was my idea)
Can I roll it? Well, that was why the first layer was parchment paper. Easy Peazy.
At this point I thought, "OH NOZE! I forgot the spinach!" Too late. Preheat the oven and put the roll on a screen.
I baked it for 45 minutes at 350 degrees F to an internal temp of 180 degrees. Then I topped it with more of that tasty basil marinara sauce, returned it to the oven and cooked it long enough to set the sauce.
During the bake, I made some Creamed Spinach Maria. Cook a little onion in butter, add spinach and a touch of water, then add flour, cook for a minute or two then add heavy cream, Swiss cheese, Cream cheese, Monterrey cheese, nutmeg, mustard powder, and cayenne pepper. Continue until creamy.
Time to slice and serve.
Second night leftovers
Whew! Thanks for sticking to the end!
Rolled Meatloaf
Ingredients:
1 pound ground sirloin
12 ounces Italian sausage
1/2 cup oatmeal
1/3 cup chopped carrots
1/3 cup diced onion
1/3 cup diced green bell pepper
1 egg
2 teaspoons lawry's garlic salt
1 teaspoon black pepper
1/2 jar basil marinara sauce
1/2 cup Mozarella cheese
1/2 cup parmesan cheese
pepperoni slices to cover roll
Creamed spinach Maria
12 ounces spinach
1 Tablespoon finely chopped onion
1 Tablespoon butter
1 teaspoon nutmeg
1 teaspoon ground mustard
2 ounces cheam cheese
1/4 cup swiss cheese
1/2 cup Monterey Jack cheese
2 Tablespoons AP flour
1/4 cup heavy cream
2 Tablespoons parmesan cheese

I'd like to slice that meatloaf, toast some white bread, slather some mayo and go to town. Probably throw on some jalapeños.

My only negative thought, was it dry, 180 is too hot IMHO? I’m going to try the oatmeal. I cook to 165 degrees.
