I steam a sack of crawfish sometimes, why because I love the pain they feel? Nah it's because it's quicker when doing multiple sacks and they die just as fast. Faster than mutilating them with a knife

No question... 90% are sold as Chesapeake crabs are LA blue crabs... My crabbing baws no where the $$$ is.

All we do is ice them down real good then grab them out of the cooler and pop the shells off. Then we season put a brick in and steam them.

The Maryland peeps don't necessarily use the mallet for smashing the crabs. They use it to tap a knife on the front claws to crack the claw and get the meat out. See the video below.

I was on the southern border of MD, Chincoteague, and they weren't going to use a knife whatsoever. That guy knows what's up (I didn't get to watch it all, yet, because my phones about to die...will do later), although a steak knife? Butter knives should be available at any place that serves crabs, so it has me thinking he's an outlier with good technique.

I've eaten and cooked many bushels of Maryland crab and I have never heard of killing the crabs before cooking.

I spent about a decade of my life in Northern Virginia/Maryland and his technique is not an outlier. That's how they do it round those parts.
