Please recommend a good mandolin...

...while you're at it, a protective glove so I don't lose my fingers

I've had the Oxo Steel Chef's Mandoline for years and don't really have any complaints.

Get a cut resistant glove on Amazon for around $10.

If you're looking for a mandoline, be very careful because they bite. Potentially one of the most dangerous kitchen tools.

I have an inexpensive plastic Orka. Works great. Cost about $30. Interchangeable blades, finger guard. DIshwasher safe.

Get a cheapo from an Asian grocery store. When it dulls, toss it and buy another.
