Making chorizo fundido (chorizo queso)

When making this at home do y’all drain the chorizo after browning? I haven’t before and it turns the dip dark red from the spices/oil I guess and it seems to make it thicker. When I’ve had it at restaurants it’s more like thin white queso with chorizo meat floating on it. Also is there anything you would add to it at home outside of cheese and chorizo?

I have no idea, as I've never made it, but I LOVE queso fundido.

Drained if you want the white look. I don't mind the color and prefer the flavor from not draining.

Add sauteed onions, bells, &/or mushrooms. Have seen it all kinds of ways and liked them all. Top it with guac and everyone can work that in as they scoop.

Make sure you get quality Chorizo. I purchased some the other day, and the two main ingredients were Salivary Glands and Lymph Nodes. Absolutely disgusting.

Got to go to a Mexican grocery store for the good Chorizo. The chorizo that’s in all the name brand stores is greasier than the wave pool at Blue Bayou

Thanks for the all advice! This is gonna be part of a larger Mexican meal I’m making. I’m doing/trying carnitas in the crock pot, homemade guacamole, homemade salsa, homemade tortilla chips, the queso fundido and I’ll probably do Mexican rice and refried or black beans. I’m gonna try to make a pineapple salsa for the carnitas too. I do most of the cooking at our house because I have more time then my wife plus I love it. Saturdays especially during football season (really all year) are my day to do it big in the kitchen. I plan my meal all week and get excited thinking about the finished product lol

Yummy, if you can…spread the cooked meat out on a sheet pan. Some juice in the pan is good. Broil for a couple mins before calling them done. The tips of meat will crisp up. Adds great flavor and needed texture.
