I prefer sous vide brisket where I cook it in a liquid smoke bath for 96 hours. Meat is 100% smoke ring

I have had one for about 3 months and it has been awesome

It seems very well built to me. I think the only downside would be limited temperature options

If your going to buy a pellet grill get one that goes higher than the usual 450-500 degrees. Also, get the bigger surface one even if you think you don't need it. You will, maybe not every time, but you will enough to say damn, I should have gotten bigger.

Here is a decent site that offers comparisons and other tips. Louisiana and Memphis grills go into the 600 range.

By the way, I would consider the Louisiana for the price and capabilities.

I recently snagged the 1000 sq inch from tractor supply on sale, $399. I love it. Really easy to use.

I have a couple of buddies who have them and they really like them but I think it's a fairly new grill. So I have no idea on reliability or customer service. That's the reason I haven't jumped on that Masterbuilt 560. I'd recommend a different brand (Green Mountain, Traeger, Rec Tec) with a history of good parts and great customer service. Because they all break. Sooner or later.
