Low carb wraps (updated info on the # of grams of carbs)

Mozzarella wraps - 4.33 grams of carbs for one cup of cheese. ETA: 2.5 grams of carbs if using whole milk mozzarella! (Thanks, LNCHBOX!)

Shape 1 cup of shredded mozzarella into a 6x8ish rectangle on a parchment paper lined baking sheet. Sprinkle seasoning over cheese if you care to. I use Trader Joe's Everything but the Bagel Sesame seasoning.

Put it in the oven on broil and watch for the cheese to start browning. Remove from the oven and let cool for 5 minutes or so.

Flip it over, fill it, and roll it up. Pop it back under the broiler for 45 sec to a minute. Remove and let it cool.

Recipe notes:

Original recipe said that 1 cup of shredded mozz is 2 grams of carbs. Two other websites said it's closer to 4 grams.

Original recipe said to put oil on the parchment paper. That's unnecessary. The beauty of parchment paper is that food doesn't stick to it

Original recipe said to preheat the oven to 350 and then switch it to broil when you put the cheese in the oven. I don't understand why, so I just put it on broil to start with.

Putting it back in the oven for 45 seconds or so also seems unnecessary, but I still did it every time.

Thanks! The pulled pork one might've been the best combination. I also did a cheeseburger one, but the juicy tomato made it fall apart. No bueno.

Sounds delicious but honestly if you're counting carbs the Mission Carb Balance tortillas are only 3 or 4 grams of net carbs. They're basically entirely fiber.

I think these are more comparable to the larger Mission soft taco size which is six grams of net carbs. I love the Carb Balance tortillas, but I have mixed feelings about going with the net carb numbers.

Yes, it is tasty, but my usual grocery doesn't carry it, so it's not necessarily less hassle.

Also, I'm not sold on net carbs being a real thing. (I am when I'm fooling myself, which happens frequently.)

indytiger, so far it hasn't! I didn't put it on the top rack, though. I usually bake with it, not broil, so maybe if I kept it under the broiler long enough it would.

Excellent post. That looks great.

I've done alot of the cauliflower "breadstix" with mozz, parm, cauli, egg, seasoning. Looks pretty similar when complete.

I'll definitely be giving this a try.

Mission makes a low carb tortilla that has 4g net carbs per tortilla.

You need to avoid cheese made with skim milk, it ups the crabs. Whole milk mozz is roughly 2g-2.5g carbs per cup.

If you do a little Googling, you'll see that there are many who argue that calculating net carbs is just a made up marketing tool.

While I've been eating low carb for a long time (with periods where I've fallen off the wagon for weeks at a time), I haven't been eating low carb enough. I'm trying right now to stay in ketosis. I don't want to fool with net carbs until I've been in ketosis a while and then I'll experiment. If you're staying in ketosis and using net carbs to calculate, then all the better for you. It's just not something I want to do right now.

Net crabs is perfectly fine for keeping yourself in ketosis. You'd have to basically eat nothing but meat if net carbs weren't acceptable in the calculation.

Well, I simply offered a recipe for something I think is a nice alternative. I'm not trying to tell people they need to eat it.
