Louisiana Jambalaya Mix

Whipping up a pot this weekend and obviously cheating a little. I'm trying not to overcook too much this go around, how many folks does a 7.5 oz box of mix feed? Says 6 servings per, but not feeding a bunch of birds

We use Cajun Fry mix made in Pierre Part.

make sure you "doctor it up".

Start with sautéing chop seasoning (sweet onions, crisp celery, green and red peppers and a touch of parsley flakes; you can buy this pre-chopped and frozen).
Use chicken stock instead of water.
Use nice size shrimp and good quality sausage .
Add additional seasoning as needed.

Thanks, yall. Will doctor up of course. Just in a pinch on this one witha medium sized group and goal to have 'just enough' rather than to-go boxes for everyone. 4 boxes will do the trick

This. I use Oak Grove for a quick cheat. It’s good with or without much doctoring up.

+1 on this. Sauté some trinity (pre-chopped frozen is fine), and use stock in place of at least part of the water, then season to taste. I know it's probably frowned upon, but add a small amount of kitchen bouquet if you want to get a deeper color.
