Go to an Indian restaurant. Good ones have a lot of vegetarian options.

Beans, rice, and a spice cabinet. Cheese is on the table....hot sauce helps anything. Look for Gardein or Quorn brand stuff at the store. They have many solid alternative meat options that work. I've been with a veg person for 5 years now. I am a devout carnivore. I probably won't give up meat, but she has helped me balance out my diet a bit.

Some of my favorites ratatouille, eggplant parmigiana and portobello sliders.You can't go wrong with any of those.

Falafel pits wraps....dress with hummus,baba ganoush(sp), tatziki, lettuce, pickle, tomato and Thia chili sauce. Hot sauce such as Siracha is good too.

Veggie Tacos.....saute chopped portabello shrooms, carrots,zuchini, garlic and onion. Make a ginger (1 tsp/ ounce of mayo)and lime (fresh squeezed) aoioli with mayo and evoo.

Kimchi fried rice w/ roasted brussels sprouts....buy 2 packages or jars (16 oz)of kimchi at whole foods. Open and drain liquid into bowl and save for later. Make 2 cups of basmati rice.
Chop kimchi coarsley. Saute 1 chopped onion til translucent and then add Kimchi. saute for 5 minutes. Add rice and continue to saute (I usually add only 1/ 1/2 to 1 3/4 cups of the rice.) Add kimchi liquid you saved. and cook for 5 more minutes. Thats done. Roasted Brussels....remove stem nubs and chop brussels in half..add 1 tbs of evoo, coat BS evenly by mixing with hands thoroughly and cook in oven at 425 for 15 minutes. Mix 1 tbl each of evoo, fish sauce and Thia chili sauce in a small bowl. After 15 minutes of cooking, add 1/2 of mixture to BS and mix thoroughly to coat. Cook another 15 minutes or so until BS are tender and can be pierced by a fork. Add remaining mixture and cook 5 more minutes. Serve the BS on top of Kimchi Rice. I also like to cook some shrimps in the oven and serve with the Kimchi Rice.

This. If I was a vegetarian I would eat Indian all the time.
