Looking for tips for Infrared Turkey Fryer

cooking my first turkey on the Big Easy Infrared Turkey Fryer.

Anybody have any experience and tips for cooking?

Does the mesh heat deflector stay on the whole time or just at the end?

16lb bird and plan to inject with cajun butter and coat outside with oil and cajun seasoning

I think it's 10 minutes per pound.
Spray the basket you are putting it in with nonstick spray.
Put mesh cover on 15-20 before it's coming to final temp and it will crisp the skin.

I love the oil-less "fryer".
Have always had great results and don't have to deal with oil and the mess.

It’s the easiest thing you’re gonna do that day. Mesh deflector goes on at the end. Follow the instructions exactly as in the book and you’re golden. I’ve cooked my birds in the Big Easy for years and never had a bad one. There are some YT videos you can watch, but it really is a fool proof method of turkey cooking and does a great
Job. Don’t overthink it and you’ll do fine.

I used this last year, i believe. i had several people tell me it was the best turkey they've ever had.

I brined mine for 24 hours.

When I first used one I was all "What is that little thing really going to do?" Well, it does a lot! Super crispy skin and a juicy bird.

Super easy and as good as any turkey you'll find. And it frees up the oven.

Very underrated benefit IMO. I do miss having the pan the drippings are in to make my gravy with tho. But, thanks to this board, I’ve learned how to make a turkey gravy using wings and have never gotten a negative comment about my gravy either.

I use the mesh heat deflector the whole time. Just putting it on for the last 20 minutes doesn’t crisp up the skin enough for my liking.

I just use a small Weber aluminum drip pan to catch the drippings. Fits right into the sliding drawer. Will hold all the drippings from a 10-15 pound bird.

Mind sharing? I’ve tried with the neck but it didn’t quite have the “punch” I was looking for

I had enough drippings for a double batch of giblet gravy that received praise. I did inject the hell out of the turkey though.
