Looking for a good hush puppy recipe

I’m not proud to admit that I normally just buy the frozen ones. I’m wanting to step my game up for a fish fry I’m having Saturday.

1 finely chopped red onion
1.5 cups self rising cornmeal
1/2 cup self rising flour
4 tbs sugar
1/2 tsp salt
1 egg
1 cup buttermilk
Vegetable oil for frying

Whisk egg in buttermilk then add all other ingredients and blend well then allow to sit for 5 minutes.
With at least 3” of 350 degree oil, drop 4 or 5 tablespoons of batter per batch for 6 minutes. Enjoy!

Candied Jalapeño Hush Puppies

Ingredients
Candied Jalapeños
4 medium jalapen~os
1/4 cup granulated sugar
2 tbsp water

Batter
1 cup cornmeal
1/2 cup all-purpose flour
2 tsp baking powder
1 tsp salt
2 tbsp cornstarch
3/4 cup milk
1/3 cup finely chopped scallions
Vegetable oil - as needed

Directions
Candied Jalapeños
Trim the stems from the jalapen~os. Slice them down the center from top to bottom and scrape out the seeds with a spoon. Dice the jalapen~os and add them to a small saucepan.
Add the sugar and water to the saucepan and cook over medium heat, stirring until the sugar has dissolved.
Reduce the heat to low and simmer the jalapen~os until the liquid has thickened and candied the jalapen~os, about 10 minutes. Turn off the heat (the liquid will thicken more as it cools). Let the candied jalapen~os cool completely.

Batter
In a large bowl, stir together the cornmeal, flour, baking powder, salt and cornstarch. Pour in the milk and stir to fully combine.
If there is excess liquid in the saucepan containing the jalapen~os, drain it. Fold the cooled candied jalapen~os and scallions into the batter, making sure they are evenly distributed.

Cooking Instructions
In a large skillet, heat 2 inches of oil to 350°F. There should be tiny bubbles in the oil.
Drop large dollops of the batter into the hot oil, being sure not to overcrowd the skillet. Fry the hushpuppies on each side for about 2 minutes, or until they are golden brown. Place the hushpuppies on a paper towel when they are done, and repeat this process with the remaining batter.

The jiffy mix recipe is easy. I just change milk to buttermilk.

This works. I usually add (depending how I’m feeling) finely diced onion, jalapeño, and/or drained corn kernels.
