Let's talk Bourdain - Cajun Country episode

In this episode, AB starts his adventure in new orleans, with the typical new orleans fare (willie maes and shite like yaka mein).
Then he ventures off into cajun country (Breaux Bridge and Eunice) and attends a boucherie.
so...anyone got a recipe for the crawfish bisque and pork backbone stew that he raved about so much? also, that head cheese looked delicious.

My pow pow took him out to the fishin hole and he got some gasper goo and garfish balls, but they didn't show any of it in the episode.

Typical stuff but I think they did us justice.
It was interesting though how he sort of poked a bit of fun at the lack of professionalism in the cooking methods.

I had never seen his but I must admit it looks great. Slightly different styles, my moms recipe is more of the old school Vacherie technique.

Yep. His tune changed when he started shoveling that bisque into his piehole, though. For him to say that was the best thing he'd eaten since El Bulli was some STOUT praise.
It did look good, and it's been a LONG time since anyone I know has gotten up the gumption to clean all those heads to make one.
