Leftover Grits and Fresh Eggs

Last night I made too much grits and decided to have a quick breakfast this morning.
Made a few eggs and warmed up some of those grits.

I stopped tossing cold grits when I discovered the joy of a pan fried grits cake with an over-easy fried egg on top.
(Agreed that some bacon or sausage would set this off! )

I remember a restaurant that would take leftover cold cheese grits, cut them in circles, fry in bacon grease and add a poached egg on top a la benedict. Sprinkled chive and smoked paprika on top.

I don't see anything wrong with that, though some bacon, ham, or Canadian bacon might take it up a notch...maybe even a slice of tomato.
