Leftover crawfish boil corn soup (with pictures)

I've been experimenting with what to do with the left over corn. Today I decided on corn soup.

Ingredients:



15 pieces of corn from the boil (cut all corn off but keep the cobs)
garlic from the boil
fresh basil
fresh thyme
kosher salt
black pepper
butter
chicken stock
shallots

Put half a stick of butter in the pot
cook down a cup of chopped shallots, a couple cloves of garlic, salt, and pepper



Once they're soft, dump in 6 cups chicken stock, the corn, the cobs from the corn.
Bring to a boil, then lower heat and cook 10 mins



Add in 1.5 tbsps chopped fresh basil and a couple dashes of thyme:



cook that another 10 mins, then remove the cobs.
Remove from heat, and Use an immersion blender to make the soup creamy.
It takes an annoying amount of time to completely breakdown everything:



Once the soup is a good consistency and completely smooth,
add about a cup of corn off the cob back into the soup.

It came out delicious. I took all of the corn out of the last batch, so it definitely has a kick to it.

The worst part was the blending. Breaking down all of that corn took forever. Next time I think I'm just going to throw it in the ninja or a food processor or something.

Tomorrow I'm using the rest of the corn to make crawfish cornbread.

Did the corn soak up very much of the Crawfish flavor? Seems like with the chicken stock it would lose that effect. Either way I would go to town on that....looks delicious.

Smart move simmering the cobs. It doesn't need to be totally puréed. A little partial purée is fine. Great job.

That looks good. I just find the corn soaks up so much spice it is hard for me to repurpose other than maybe the cornbread.

If you want it more smooth like a veloute run it through a chinois after you hit it with the blender. I would top it with a few cracked pistachios.

Quick

How long can i keep crawfish in the frige? Ive got about 10 lbs of boiled crawfish from friday. Think i could make a leftover meal like this with the tails still?

Next time I'm going to either save some extra crawfish or get some fresh shrimp for sure.
