Lamb Heart Ideas?

My son brought me a bag of lamb hearts from the local farmer’s market. Looks to be about four of em. Most Google returns are for braising in a stew. I’m not dismissing that, but it’s a little warm for me to get excited about a stew. Did see one that called for slicing thin and quick searing in a pan.

Cut the connective tissue off. Chop into chunks of similar size. Marinate in crushed garlic , lime, salt, pepper, purple onion , cilantro , and cumin. Grill on a skeewer or in a basket.


Same method. Substitute lemon for lime. Parsley for cilantro. Turmeric and all spice for cumin. Make a little zstitsika sauce and make a bad arse pita sandwich.

Slice, marinate in something acidic with sliced onion. Grill at high heat, skewer if you want. Go buy some tzatziki at your favorite Greek carryout. As a very lean muscle, it will not be as flavorful as lamb shank or leg...good anyway.

I would marinate grill it and roll it up with Grecian sauce, cucumber, tomato, lettuce. I probably make curry with the remaining.

Go to meateater website. Go to recipes. Search deer hearts. Danielle and Steve will take you through process of cleaning your hearts. Very important.

Funny that you mention this….. I ended up there today watching deer heart videos. I’ll be trying their whiskey butter lamb heart recipe soon.
