Keto Quiche - I guess - with photos

Something different and good too.

Keto Quiche

I used things I had in the refrigerator - nothing special

Need:

1 Onion, sliced
4 Mushrooms, sliced
6-10 slices Deli Black Forest Ham
3/4 cup Broccoli (Thawed from frozen)
4 Eggs
4 slices Provolone Cheese
1/3 cup Monterrey Jack cheese
4 slices Swiss Cheese
3 Baby Bella Cheeses
1/4 cup parmesan cheese
2 Tablespoons butter
Salt and black pepper

Did not use the cheddar cheese shown
Mushrooms are not in the photo



Preheat oven to 350 degrees F. The quiche will be cooked in an oven proof no stick skillet

Slice onion and sauté in butter with black pepper





Prep mushrooms.





and sauté with onions



Cut up and add ham and continue sauté until ham is hot.





Add broccoli



Add a lid and continue cooking until the broccoli is done.



Prep cheese.



Add to pan



and stir



I Used 4 eggs



Whip eggs and pour over mixture



All components except the eggs are cooked. Cook the onions in the preheated oven until set. In this case about 20 minutes.



Pull skillet and cover with parmesan cheese.



Return skillet to oven and cook for 5 minutes, then use broiler to brown lightly



Cool for 15 minutes before slicing.

Enjoy - This makes enough for 4 servings.

Yeah, seems to be a frittata. It does look pretty good though. I'd skip the mushrooms and swap the broccoli with spinach as personal preferences.

Looks good! I thought you might do something like this for the egg challenge.

Looks good and non low cal. One tweak is I'd add the broccoli sooner since it takes a while to soften. Definitely longer than the mushrooms.
