Jazz Fest: Jamaican Chicken & Curry Chicken Pattie (Pics)

So I tried my hand at my favorite Jazz Fest food today...found at the booth below near Congo Square. I don't have pictures of every step but just wanted to share what I have.



For reference here is the plate I ordered in 2016.



Cooked down some veggies for the Jamaican Chicken



Made dough for the curry chicken pattie



Ground chicken and spices for the pattie filling.



Before heading in the oven



Out of the oven



Finished plate: Jamaican Brown Stew Chicken, Curry Chicken Pattie, Steamed Veggies & Rice.



Inside of Chicken Pattie. Brown spot is a little bit of Pickapeppa sauce I drizzled over everything.




First time trying to cook anything like this and overall I was pretty satisfied with my effort.

Looks awesome! Great effort. Does the stewed chicken use similar spices as jerk chicken?

Thanks.

The recipe I used cheats by using browning sauce (kitchen bouquet). I believe in an authentic brown stew chicken the brown color is achieved by cooking the chicken down in brown sugar. This recipe turned out just fine for what I was hoping to accomplish. Also, instead of a whole chicken I just used a small pack of bone in thighs and a small pack of drumsticks. LINK

Thanks.

A lot of similar seasonings to jerk but the brown stew chicken's end result is more on the sweet side than jerk chicken.

Thanks everyone. I wish I could have been at Jazz Fest eating the real thing but this along with WWOZ's Festing in Place brought some joy for the time being.
