Jambalaya

Need to cook a jambalaya for 100. How long does it take. I have never cooked one this big do not sure on time

4 hours, could be done quicker but if it is your first give yourself at least 4

Ok tks So I have read that it may take a few more minutes to steam the rice with this big of a batch. I usually follow the 25min on low fire then fold and 15-20 min no fire. Is this long enough

Man you will get a hundred different opinions on this, it takes some time to learn your setup and will depend on how long you cook your rice before covering and how much heat your rig produces on “low”
I bring to a rolling boil, add rice and stir once every 30-45 seconds gently for about 8 minutes or until most of the water is absorbed , then turn heat down and cover looking for steam to be escaping from the lid for 10 minutes, then quickly open, and
“Bleed” the gravy on top to the bottom by running the paddle around the edge of the pot but not stirring, re cover and go another 20 minutes then cut heat , open and flip the rice and let sit as long as you can

Here’s how I do it: get the water to a boil, add the rice. Stir for 5-10 minutes with the water still simmering/boiling. Cover and put fire on low. Cook for 30 minutes. Every 10 minutes, give the whole pot a stir. After 30 minutes, give it another stir, turn off the fire, and let it sit covered for 10-20 more minutes with no fire.

If you have everything prepped ready to go about 3 1/2 - 4 hours

What size is your pot?
What kind of rig are you using to cook it?
What proteins are you using? Browning of different meats takes different times.
What kind of rice are you using?
How many gallons do you plant to cook?
Too many questions to answer your question accurately.
