I season my meat with about 1/2 of what I anticipate on using of my dry seasoning. Put it in ziploc bag overnight. More of a dry brine. I dont put any "wet" seasoning in my jamabalaya aside from hot sauce.

Nah, I'm usually starting the jambalaya in the morning, so I bring it inside and feed the kids for breakfast.

I cooked one last weekend and marinated my pork in this. It was ok.

Never the pork. The chicken, I make homemade stock with and debone using that meat later in the cook. Really not marinading but the meat seasons from the stock I make as I add seasonings to that broth. I then use that for my liquid in the jamb.

I do almost all of my prep before hand, and I'll season the chicken. I don't season the pork.

I do freeze the chopped veg.
