I've cooked a 30 gallon pot of jambalaya for a Red Cross fundraiser several times. Granted it wasn't full meal serving but have served 500.

I'll have to check my recipe but I know it's 37 pounds of rice because I weigh it out before arriving at the cooking area.

Wow. Guy obviously knows what he's doing. I've never cooked over a 30 gallon. I'd like to taste it.
That's seems like an awful lot of bell pepper and garlic. Like I say. I'd like to taste it.

I'll have to dig out the file I keep for that event. Here's a picture of last year's pot of jambalaya.
In the past I(I do have a couple of helpers. Lol.....)I've made 25 gallons of gumbo on two different occasions. Last year about 20 gal. of red beans instead.
I want to say we chopped about 33 pounds of onions for the jambalaya and the bell peppers I got chopped already. I believe that was about 12 pounds.
In about 6 weeks time I went through one hundred pounds of onions.

Pochejp, yeah, I have serious respect for someone who would even attempt that, much less pull it off.
I wonder where he picked up his skill - wonder if any Louisiana ties there.

When in high school I cooked a jambalaya for a fundraiser.
Iberville parish used to rent out large pots, idk if they still do.
I did 60ish gallons in a big 75 gallon pot. The meat is the trickiest thing there. We couldn't afford to do more than 25% meat. My water ratio was two knuckles of water over the top of the rice.
My usual jambalaya is a little less than a single knuckle.
I can make a 10 gallon blind folded and so drunk I can barely stand. That big bastard took three of us hustling. We chopped everything by hand and had a deep freezer to keep everything cool.

He's not an Aggie, a BR Fire Captain from Brusly with 31 yrs experience. Avid bowhunter which is how we crossed paths. He hunts & cooks all over the country and recently did a huge crawfish boil for his son's architect firm in Nashville
he's good friends / family with several A&M fans and treats them to killer groceries like we roll in SoLA. Definitely not his first rodeo
