That's a dish that I usually would immediately respond IWNEI. Too much going on and too rich. But for some reason, I'm intrigued, so I'll go IWEI, but only a bite

Sub a filet for that salmon and don’t drown it with the sauce and I think that would be fire.
As is, I would taste it but I don’t think I would eat a large portion of it. Perhaps as a small plate or a taster it might work. It just looks rich as hell.

My thoughts exactly.
Lots of my favorite things in that dish, but they don't necessarily go together.

I would not order that at a restaurant or make it, but I'd definitely try it if someone were to offer it to me. I'm sure I couldn't eat the whole thing though

Boudin and salmon don't seem like they would go together... but I would give it a taste.
