One of my colleagues makes a tomato pie that’s basically a flaky pie crust, thin sliced tomatoes lightly dusted in seasoned flour, fresh basil, and topped with a mixture of mayo, mozzarella, and parmesan. I think he dried them on a rack for a bit after slicing to keep it from being watery.

Among many tomato dishes I've been making, my favorite and newest one is an israeli tomato salad from the Shaya cookbook which is awesome. Has preserved lemon vinaigrette with zaatar and plenty of fresh garden parsley.

That sounds so good. I've had the Israeli salad at Shaya and it's terrific.

I love Cousin’s. Tonight was thick sliced with s&p topped sliced green onions and a drizzle of olive oil and balsamic vinegar. A childhood favorite.

My wife stumbled upon this dressing a while back and introduced me to it after getting a bottle of it at Rouses one day. That stuff is very good and a little goes a long way. Then one day when in Costco we saw they were offering a 2 pack of it for just a little more than what 1 jar costs at the local markets and we got hooked.

Then Costco quit handling it after about a year or so, but they seem to do that a good bit with some of their products from outside sources.

Cousin's is very versatile. I love it on shrimp and crabmeat, tomatoes (fresh or fried green tomatoes) and in a salad. On Christmas Eve, we put it out with the thin sliced beef tenderloin and slider rolls. It's excellent with the beef. Reminds a little of a horseradish sauce on the beef, but it's not. It also reminds me of a white remoulade in a way.
