Sorry, wink, but the experiences I've had with northern LAers..

The sad part is they're all from southern LA, outside of Washington in the boonies. But they lost their cajun ways, they can't even cook a decent rice and gravy anymore

I was getting instructions on a new phone at the time and the guy was telling me to try the hold button, so that's what I typed. No other meaning there.

Ok guys, need some help. Place in Chinatown has water ducks and peking ducks whole. He told me that the peking duck is more oily, which would be good I think since I am going to render it first and make a bit of a stock.

A quick look on google doesn't result much, so does anyone have any suggestions?

Go with the more oily of the two.
