It's All About That Bark - Pulled Pork

A good bark will take the flavor of your pulled pork to the next level. Put this one on the Masterbuilt 1080 (shout out NOLAGT) yesterday morning around 10am at 250. Seasoned with Heath Riles Garlic Jalapeno first then James Cruse's Stockyard Landing - All 'Round. After 8 hours the bark was money so it was time to wrap. Internal was 174.

Double wrap in foil. Dusted with All 'Round then poured a little bit of The BBQ Sauce over top, then the remaining liquid from my squirt bottle (apple juice, worcestershire and Crystal Garlic Hot Sauce).Cranked the temp to 275 and set a timer for two hours. Probed it for tenderness after timer went off. Still had a tiny bit of tug. Temp was 202. Let it go for another 45 minutes. Probed tender. Temp was 207.

Pulled it and rested it down to 160 on the counter. Set the oven to 150 and put it to bed for 12 hours. Pulled it today for lunch and that overnight rest did some magic on that butt.

I made the mistake of buying a Traeger.

You can make good pulled pork with a Traeger, and it’s fool proof, but it’s never going to make it like the OP’s.

Traegers are nice units. You got to play with it to turn out good bark on a pellet but it can be done. Start at 225. Apply your favorite rubs. Heavy top coat. Then put on a layer of brown sugar. The sugar caramelizing will create the bark.

After 3 hours bump the temp to 250.

Always have a spritz bottle on hand. Spray the butt every 30-45 minutes or so to keep the top moist. After 2hrs at 250, bump it to 275. Keep spritzing. A decent bark will eventually develop.

Putting more moisture on something you’re trying to create a bark on is antithetical to one another.

Good stuff. i have been smoking them lately without wrapping them but will try that method next time

I used the foil boat method on my last brisket, rather than completely wrapping the meat . Instead of wrapping the brisket around 170-180, which i found did not produce a great bark as the moisture kept the bark from crystallizing, i saw a video on youtube from smoking dad where he made a boat out of foil and didn't cover the top. What this did was allow it to continue to cook and stay moist, while allowing the top to dry out a bit to form a nice bark. It also had the added benefit of preserving all of that juice, which i reinjected into the brisket before resting, and used some of it in my beans.

Yeah the foil boat method was started at Leroy & Lewis in Texas. Gives you the best of both worlds if you're after a crunchy bark. If you've ever watched Chud's BBQ on YouTube, he's a big proponent of it. I've personally never tried it.

It's when you put it that matters. I don't constantly spritz and keep the top full of moisture. I generally spritz every 45 minutes or so but don't keep official times on it. That gives more than enough time for bark to form. The spritz obviously wets the bark which in turns causes more smoke to stick too while also keeping any edges from crisping up.

The first picture up top was spritzed at least once every 45 mins or so over the course of 8 hours. So while you would thinking spritzing would hinder your chances at creating good bark, the picture proves otherwise.
