It is funny you posted this since I made a batch last week and added chocolate and Dad's Root Beer. I often do add coffee but did not this time. Well, it tastes fantastic with a brown mole flavor but still ended up too bitter.

Adding some tortilla chips absorb some of the flavor.
Thinning it out with water will help
I ended up stuffing a pepper with a Mexican Rice/Bitter Chili mix and topping it with the chili. The rice will balance it out. I have some leftover and it will top some cheese enchiladas.

With a name like epic I am guessing it would be really long. I wasn't really looking for ideas. I just made it and realized after the fact I needed some assistance.

Trout Bandit, if you get blasted for Ketchup, my solution will likely draw calls for bannage.

I get you, bro. I always like throwing random things into what I'm cooking. Experimenting. Sometimes the food's unrecoverable, but chili should be really flexible and easy to fix.

the one i made yesterday was a little bitter...too much pureed arbol peppers. ketchup & chocolate chips did the trick

If it were me, I'd start with a few tablespoons of vinegar. Then add more cumin. Then some smoked paprika. Then some chili powder. A touch more salt.

Then add beef or chicken stock (beef preferably) and simmer it for a while.

Oh, and a few tablespoons of Worcestershire.

Left over coffee was a very common ingredient in chili as water was scarce on trail rides. I always put it in my chili and it's never made it bitter. I think the IPA is what got him. I use stout or even a lager, but never something hoppy.
