Is there something specific to Japanese peoples' DNA that makes them uniquely well suited to roll up raw fish and rice?

No. That's sort of my point. So many of the folks opening the sushi joints now have not inate sushi heritage. I guess they can fool a lot of people into thinking they do because they look "Asian", better than say a Mexican could, though.

Even in Vancouver, I see it dying out in 50-60 years.
I give Mexican food in Atlanta 30 years tops.

Shogun on Vets, one of New Orleans original and best sushi joints, loaded with Japanese owners and chefs, has a young Mexican guy trained as a sushi chef, for a couple of years now.
Houston area places have many Mexican sushi chefs, especially inside HEBs and Central Markets.
As for the original question, it's here to stay, but surely BR will have natural attrition and retraction of many satellites, as there are but a few that do solid sushi..most are mediocre poseurs.

If intending Ichiban's or Koto's owners, he meant Kung Fu..even though traditionally sushi joints are owned by practitioners of Judo.

some, lots of the ones in north jersey were run by Armenians....same with the pizza places. We called them the Armenian pizza mafia.
Haven't been back to Sunnin yet, but will def make another trip. There is so much great ethnic food here it's tough to make many repeat trips too soon.

I think it is here to stay. Sushi is a refined taste like wine. Many people eat it the first couple of times and find it ok, it takes time to grow on you.
South Louisiana eats a lot of seafood; this is just a seafood dish in a different format. While I love fried, grilled and boiled seafood, you can only eat so much without getting tired of it. Sushi adds a different seafood cuisine that I think complements our other seafood choises.
If we were in a city where seafood was a niche market I would think a fad, in South Louisiana I think it will be a staple.

BR needs a place with high grade fish. I don't care what the place looks like, I simply want the best and freshest possible. I want a sushi place that doesn't use fake kani. Is that asking too much? I want a place where I can sit at the bar and have the chef feed me the best he has instead of having some jackass college kid make me write down my order with a pencil stolen from a golf cart. I want to see the chef slicing flesh right off the bone instead of unwrapping a slab of tuna that has been sitting in saran wrap for 3 days.
I don't care about rolls. In fact, I hate rolls and all the glop they put on them around here.

Elaborate rolls are for chicks, sushi amateurs and people that don't know their fish.
One decent omakase menu is all I want.
One decent kaiseki chef in town.
I have had real kani at Sushi Yama, and once at Kamados, though.

99% of sushi bars in BR are owned by viets. Part of the problem.

Yeah, when you have a hard time finding even old school style seafood joints in town serving anything other than tilapia as a "fresh fish of the day", you're probably gonna have to keep dreaming for this in the way of sushi places.
