Pork belly!
I also got the pork belly at Cut and a friend got the Tuna tartare. Both were great but I really loved the pork belly. You're dead on about the service as well.
I'm going back in a few weeks. I want at least one high end meal such as this but I can't decide if I should go with a known quantity like Cut or branch out to something else.

I wasn't offered chopstick but it wasn't a solid roll anyways. This menu was advertised as Spanish Tapas.
Sunday Dinner: Javier's at Aria
If you enjoy mexican food set to the music of Wu Tang Clan, then you will love this place. I didn't bother with food pics on this one but we had the guacamole, which tasted pretty bland. I had the chicken nachos, and was disappointed to find that if I picked up one chip, all of the cheese and chicken on the plate was attached. I spent too much time messing with this. It tasted good but I need every chip to have its own cheese, chicken, tomatoes, etc. on it. Mr. Iluv had the short rib. I did not like it and found it to be too spicy, but he loved it.
I did decide to take two pics of the decor of Javiers. I felt more like I was in a fancy Pirate ship driven by Busta Rhymes than a cantina south of the border.
Argh, wanna swing from the ropes?

Forgot about this thread. Will definitely be trying Cut and Burger Bar when I go.

There is Gordon Ramsey's Burger at Planet hollywood then there is Burgr Bar at Mandalay Bay. I also saw Holstein's at Cosmo, which someone on here recommended.

Staying at Cosmo most likely. After staying there once before I almost find it pointless to stay elsewhere. The room, bathroom, balcony, view, and location make it perfect for what I'm looking for.
Also, been to Holstein's and wasn't super impressed for the price. That's why I started going to the place in Paris as you are walking towards Bally's.

Very straight-forward cocktails there and are made exceptionally well. I recommend getting one of their signature drinks and then for round 2, tell the bartender what sort of flavors you like and they'll make a custom drink. It's also right next to the lobby so it's prime people watching as you sip a beverage.

We walked around Cosmo a little bit. The chandelier bar was pretty. One of the bartenders was an LSU fan. The sports book at Cosmo is TERRIBLE!

Sports Book and Casino in Cosmo suck. But everything else about it is awesome and it's close enough to several other great casinos.

If you have a big group check out Carmine's at Caesars. It just opened I think. Some of the largest Italian portions ever and the food is amazing.

Best steak I have ever eaten. Perfectly cooked, medium rare filet. Couple of bottles of Argentinian wine. Would go there again. And would again partake of the filet.
