Seriously, anyone going to New Orleans or living there should make it a point to go to Casamento's unless you don't eat fried food, oysters on the half shell or chargrilled oysters. In that case, don't go. Keep in mind that it's closed for the summer, so plan accordingly.

When you go, expect to wait in line, depending on the time of year and the time of day. Don't expect to coddled by your server. It is what is is. Take a trip through the tiny kitchen just to see it. Play like you need to go to the outside bathrooms and while you're out there, visit with the woman grilling the oysters. She's a hoot! Your cell phone probably won't have bars in the building. Mine never does.

Bring cash or use the machine in the front by the door. Talk to Mike the Shucker while you're in line and ask him to do his Blue Runner Red Bean commercial for you.

If Hansen's is open, it's the perfect place for dessert.

I've always wanted to go there. I'll have to hit it up next time I'm in NOLA

I hope your CPU crashes. Lucky for me I live in walking distance to both of those places and frequent them often. Most of the other stops on your trip is a once a year special occasion type meal.

Nice review. It's amazing they don't have a real deep fryer in that place.

Oh hell yes. Mrs. Timbo and I went there for Good Friday. The Casamento's oyster loaf, dressed with lettuce and tomato, may be the best sandwich on earth. The quality of the raw oysters there is unreal. They're just huge and fresh and slightly salty.

I have done okay for myself, but I paid for nothing. The entire trip is a birthday gift. Believe or not, there are people who love me. A lot.

Just what I want in a cook ... a sleeveless shirt. That way, his armpit sweat drips off onto my freshly "salted" oysters. I seriously don't see the appeal in this place.

The second photo reminds me too damned much of one of the cooks at the original Mike Andersons and his stirring of the pots on the stove.

Those are pots of lard. Each pot used for a particular seafood.

It was, Mr. Balls. It's fun every year.

And, I think sleeveless shirt guy is part of the charm. Pence hasn't been in many restaurant kitchens, obviously, and he'd have a hard time getting those armpits properly aimed over those hot pots full of popping lard.

I understand your love for Finn's, but Casamentos... . The place has a certain nostalgic value. I get. But take it for its face. The food is okay, but it isn't anything that great or extraordinary.

Casamentos is essentially New Orleans's version of Johnny's Pizza.

Nah. I don't work at Hansen's.

I can't make that better than restaurants and you really need a good crawfish stock not overseasoned or oversalted from a boil, in my opinion.

I have a cream based pureed bisque that I'm just resurrecting to make this weekend, though. I'll post it in the recipe thread if you want it.
